Hot pot has long been a traditional favorite among Asian cuisines, and dates as far back as Medieval China. The concept of hot pot is simple. You set a pot of simmering broth on a portable burner on the table. Then you prepare plates of meat, seafood, and vegetables that are ready to be cooked in the broth.
火锅长期以来一直是亚洲菜系的传统并深受人们喜爱,最远可以追溯到中世纪的中国。火锅的概念很简单,你在桌上放一个便携炉,上面架着即将沸腾的汤。然后在炉子的周围准备好几盘肉,海鲜和其他蔬菜,可以随时放入汤中煮。

After so many years, hotpot has evolved into many forms and tastes according to their geographical origin. Some popular hotpots include seafood hotpot in Guangdong, sauerkraut hotpot in Northeast China, chrysanthemum hotpot in Suzhou and Hangzhou, and beef hotpot in Hong Kong. Our very own Hongkongese hotpot joint in New York, Mister Hotpot, has garnered so much love from its patrons because its new way of combining the traditional hot pot style with modern hot pot concept.

However, like the concept of barbeque, hotpot is meant to be a highly communal meal, with a lot of sharing and talking while you cook and eat.
Therefore, whether you are making your first visit to Mister Hotpot, or perhaps you already pride yourself as a hotpot connoisseur, you might still find the following tips helpful to make the dining experience an enjoyable one for you and your friends.

1) If it’s not roiling, it’s not boiling!
Let your hot pot come to a boil before dunking stuff into it. So, wait, wait, and then wait some more. If you find the wait improbable to bear, talk, chat, drink beer! Hotpot is meant to be a meal that encourages socializing after all. Once your Mister Hotpot Signature Soup Base has come to a boil, you can start cooking your food.
如果没有打转,就是没有煮沸
在放东西进去之前,让你的火锅先煮沸。所以,要等待等待再等待。如果你发现时间过得实在是太慢了,就聊天,喝啤酒。毕竟火锅就是旨在鼓励大家社交的。一旦你的锅大爷招牌汤底开始沸腾,你就可以开始涮你的食物了。

2) Well done or medium rare?

Make sure your food is cooked through. The vegetables are not so worrisome. If they are food like the Fish Tofu, Pork Ball, or Wonton, those need to float before you start eating them. If it’s raw meat, wait until the meat has fully changed color before you eat it. If in doubt, wait 15 more seconds!
全熟还是半生?
确保你的食物完全煮熟了。蔬菜倒不用太担心。如果是食物像鱼豆腐,猪肉丸或者馄饨之类的,要在它们浮起来了才能动筷子。如果是生肉,等肉完全变了颜色再吃。如果不确定,就多等个15秒。
3) Hotpot etiquette!
Find out beforehand what the rules for double-dipping are, because not everyone is comfortable with it. it’s always safest to use the ladles provided for cooking. Also useful is to find out whether people have any food allergies or strong aversions to certain types of food. Don’t order such items, or you can cook these items after the person has finished with the hotpot.

火锅的礼仪
在吃火锅前先了解一下重复蘸酱的规矩是什么,因为并不是每个人都觉得舒服的。最保险的是使用煮菜的勺子。另外,找出客人中是否有食物过敏或是对某种食物有强烈的反感也很重要。不要点那样的食物或者你可以在那位客人吃完火锅后再煮那些菜。

4) Mix and matching taste

Some foods are less neutral-tasting than others, and have the power to change the taste of the entire hotpot, so beware! Food such as the seafood balls, dumplings and all types of tofus tend to be more neutral-tasting, as do most white fish meat. Shellfish can impart a yummy umami sea-flavor. Meats are the most controversial, I often find. Chicken and pork have less controversial flavors, but mutton can impart a different taste to the soup base.

5) The hotpot connoisseur
When you feel like you have the basics covered, master the advanced cooking techniques. Realize that there is a certain (logical) order to cooking your food.

Before bringing the hotpot to a boil, add root vegetables like Carrot, Chinese Wild Yam and Lotus Root – obviously because these take longer to cook, but more subtly because they impart flavor and sweetness to your Mister Hotpot Signature Soup Base.

在煮沸火锅前,放入根类蔬菜,例如胡萝卜,中国野山药和莲藕。很显然因为煮熟这些食物需要更长的时间,但隐晦的说是因为他们为锅大爷的招牌汤底增添了风味和甜味。

Just as the broth comes to a boil, add the items that take moderately long to cook, such as the Fish Cake Roll, Quail Egg, Fish Noodle, Pork Sausage, Fried Bread Stick, meat balls, but also vegetables that need some time to wilt, such as Napa Cabbage or Wooden Mushroom. When these are cooked, you can start putting in the items that cook in a flash, such as leafy vegetables like Garland Round Leaf and Spinach, and also thinly sliced raw meats and fish.
当汤底沸腾的时候,加入那些需要较长时间来煮熟的食物,例如鱼蛋卷,鹌鹑蛋,鱼面,猪肉肠,炸面包棒,肉丸,还有一些蔬菜需要更长时间来煮透,例如绍兴白菜,木耳等。当这些东西煮熟后,你就可以开始放入瞬间能熟的食物。例如叶子类蔬菜像茼蒿和菠菜,还有切成薄片的生肉和鱼片。

Finally, when you’re about done, you can cook the starchy items like Rice Cake, Shanghai Noodle, or Potato Noodle. These will soak up all the flavor and taste that have been building up in your Mister Hotpot Signature Soup Base, and will taste wonderful as a final dish.
